I made this really easy & good thing yesterday which we'll have again tonight.
1 cup dry garbanzo beans, cooked and drained, or two cans rinsed and drained
1 sm onion diced
2 cloves garlic minced
1 pkg Goya Sazon (Culantro y Anchiotte)
4 oz tomato paste
2 cups chicken or veggie stock
2 diced andouille sausage links, cooked
2/3 cup dry white rice, cooked and fluffed
1 tbsp olive oil
Prep the beans in InstantPot or on stove
Put the oil in a hot sauce pan, add the onion and garlic, toss it around until its soft, add in the spice pack
Add the sausage, beans, stock. Bring to boil and then down to a simmer. Stir in the tomato paste, then cover the pot and let it simmer while you make the rice.
