Tonight I'm gonna have pasta w/ my version of Ragout.
Pork ribs, beef cubes and Italian sausage, all braised in a cast iron dutch oven.
When meat is tender (and ribs falling off the bone I add sweated mirepoix, diced tomatoes and in this case lima beans...spiced with garlic, marjoram and basil. simmering now, could be a very early dinner.
Wish I had a Chianti or Brunello to go with but a bold IPA will do in a pinch.
