I have discovered the great secret for green beans--deep fry 'em! Seriously, get an inch of oil or so good and hot in a wok or heavy saucepan, take your green beans all washed and THOROUGHLY dried and put them a handful at a time into the oil. Leave them in for a minute or two until the skins are kinda blistery then fish them out. When they've all gone through the oil, pour the fry oil out and float a bit of sesame oil in the wok and saute some garlic until it's nicely aromatic, then toss the blistery green beans back in for a minute or so. Toss in whatever else you like for seasoning--I used some deep roasted sesame dressing and it was to die for, but a bit of soy sauce or hot sauce or whatever else sounds good would be just fine. I have never had better green beans in my life! I used yard long beans, which tend to be a little tough, and they were almost creamy in texture and the flavor was amazing. Try it, you will not be sorry!
