My dad used to call this "Risotto". It's tomato rice
Chop up:
Bacon
Onions
Mushrooms (or open a tin of champignons)
Melt butter in a big saucepan
Fry bacon, onions and mushrooms in aforementioned saucepan. Toss in a couple of handfuls of any rice you've got. Fry in the bacony butter until slightly translucent, then toss in a can of diced tomatoes. Top up the pan with water, stir to make sure nothing's stuck on the bottom, clamp on the lid and turn the heat down to about a medium simmer.
Occasionally go back and stir it to make sure it's not sticking. Cook until all the liquid is evaporated and the rice is tender.
Not the fastest meal, but almost no effort and quite tasty.
