Asparagus--I need to try the EVOO etc; Easter Egg Potatoes, and Polish sausage (instead of ham).
Easter egg potatoes are pretty much just twice baked with a twist: dice up some hard-boiled eggs, grate some Gouda cheese, dab or two of Dijon mustard; mix with potato fluff (cannot think what the inside of a potato is called--no brain today)along with some sour cream, salt/pepper etc to taste. Fill the potato shells and broil for about 2 minutes until they're browned.
I love this because it uses up the hard boiled eggs nicely. Plus, it's got potatoes, sour cream, Gouda cheese and Dijon mustard--what's not to like?
