I....I didn't have dinner last night. Got so busy that I just forgot.

Oh well, guess that means I have to have 2 dinners tonight, right?

Sometimes you need a gourmet taco from a Rick Bayless recipe with lovingly treated fish, a delicate yet still spicy sauce and soft tortillas fresh and still hot from the factory in Queens.

And sometimes you need to throw some ground beef in the skillet with a metric assload of spices and serve it on Ortega taco shells with shredded lettuce and cheddar cheese, sour cream and salsa.

Yeah, tonight fell squarely in the second of those times. I did make my own salsa in the molcajete, though.

Turkey dinner sounds great. Sounds comforting.

I just am finishing up some rice with what is only called "curry powder hot" on the label. Not very good curry powder. Can of tuna on top, some butter, and lots of genuinely hot red pepper flakes. Not really comforting food, but I am brushing up on something called reduced residue systems for a test tomorrow, so I guess it's apt. Screw it, I'm adding another can of tuna to the rest of the rice and more hot pepper.

I'm not two years old, but I am ALL about mac and cheese. It's one of my all-time favourite* comfort foods, second only to chicken soup.

No idea what's for dinner tonight, but there appears to be half a pig and a gallon of double cream in the fridge so I'm hoping for a carbonara.

(I spell the way I was Canadian raised, with the Queen's English, but due to swype, I either have to reprogram it every time (and it rarely intuits it after I've manually entered it) or it just defaults to American. I just give up when swyping, but when typing on my comp, I revert back to QE. So if inconsistency bugs anyone, I just don't give a damn.)

I don't know what I want to make tonight. I'm not hungry. I know bubs has been craving meatloaf, so maybe I'll make that. I've been shying away from meat lately. I feel the vegetarian in me creeping up, ready to pounce. On a carrot. So I will probably be eating a plate of yummy mash tonight.

I appreciate that, since I just find it easier to type the way I have to locally. But I also understand that some US-English folks might find the extraneous Us to be a little bit jarring.

Even as a card-carrying steakoholic I know what you mean. Sometimes I find my eyes creeping to the side of my head and my incisors lengthening, as the seductive lure of a salad captures me with its siren call.

However by the sounds of it, it'll be sausages, mash and onion gravy tonight. Another favourite comfort food.

I just asked what kind or sausage; "Well, we've got pork, beef or wild boar. Or if you would prefer, I can shove some cat food in tube of food wrap?"

Chicken and dumplings from an America's Test Kitchen recipe. Damn, those folks know their stuff. Every recipe I try from that show is a winner. The dumplings in this recipe are like crack and I have to restrain myself from a carb-stuffing fest.

I got bitten by the same eating-like-crap bug that a lot of others have. I'm currently chowing down on about a pound and a half worth of salad bar veggies. That includes a small spoonful of a pretty decent barley and apricot salad...I think it would be even better if the barley was still warm (but that could just be the fall weather talking).

I also picked up some turkey smoked sausage and some onion and peppers to make up a quick skillet if the wife wants later. That's one of my quick and easy go-to meals, especially when the sausage is on sale!

Love watching them for techniques and tips, but I seriously have to quadruple the spice they use, at the very least.

I made up a dish and I love it.

Sauteed finely chopped onion and garlic and then added a tbsp of curry powder, then a bit of salt.

I dropped in about a pound of shrimp and cooked until almost done.

I added a can of tomato paste and some EVOO to loosen it up and tossed in some dried pepper flakes.

I turned off the heat and added pre-cooked pasta (whole grain angel hair)

The serious yum!

I'm taking some of that turkey smoked sausage and a whole bunch of veggies*, giving them a quick sautee, then adding in a Chunky Garden style pasta sauce and serving over pasta.

I've been craving vegetables for the last few days, and last night's big salad was a good start, but this should help close it out.

*I know I have onion, a couple of different colors of bell pepper, zucchini, eggplant, and chili peppers. There may be some tomatoes left...maybe some others in the fridge...maybe some carrots and celery in there...

I picked up a bag of Vigo New Orleans Style Red Beans and Rice at Dollar General for a buck.

Never tried it, and I had a 1/4 link of Turkey Sausage in the freze from my split pea that I needed to use up. I doctored it up by browning the smoked sausage in a tablespoon of butter, then really sauteed the shit out of it and a 1/4 cup finely chopped onion, a clove of garlic, 3 seeded and finely brinoise fresh cayennes and a 1/2 chopped tomato from the Garden. I'm cooking it right now, and so far have followed the directions, but the cooking time of 22-25 minutes seems to be quite a bit off. It's been 35 minutes at a low simmer and is still quite "wet" and a bit soupy. I'd like mine to be a bit more dry. Smells great though. Will report on taste...

(eta 3 minutes). Tried it and it tastes pretty good, bit salty, but the spice is right. Pretty pasty and starchy though, no seperated dry grains of rice here, more like rice a roni.

Plans have changed. Due to the lengthy preparation time (preheating oven, cooking, getting condiments ready, etc.) I'm going with a bowl of Frosted Flakes.

Seems a lot simpler to me. Not real sure what the husband had for dinner - he went upstairs to sleep.

I went veggie tonight. Sliced cuke & Roma tomatoes in balsamic vinegar. Then a big bowl of nuked frozen veggies slathered in butter & salt. Then a nuked potato because I was still hungry. Now I'm working on a vodka martini with a twist of lime. That's made from vegetables, right?

We went to Red Lobster last night. (Mrs. Larsen wanted a lobster.) The fried shrimp are good, but the french fries are very good. The shrimp with fettuchini is ok, but not stellar. Next time I may go for just the fried shrimp and french fries.

I made pizza bread once, had a thread about it...can't remember if I posted the recipe and I'll be arsed if I feel like looking it up right now. Anyway, nice to know someone else here knows there is such a tasty beast.

I had a toasted tomato sandwich on wheat bread this afternoon, and now I'm on a tomato kick. I fried up some kielbasa for my husband, but I'm not interested in that. I made simple butter noodles for a side, and I'm going to take a serving out for me and slather it in tomatoes and olives. It's all I want.

There's this expensive spreadable cheese stuff in the deli of my grocery store. Like $7 for a six or eight ounce tub, so I rarely buy it. But it was on sale and I had a coupon, so garlic and herb yummies were ours.

Mixed garlic herb spready cheese with ricotta, more herbs and garlic, 1 pound of cooked crumbled sausage and some italian bread crumbs to help hold it all together. De-stemmed a boatload of mushrooms and chopped up the stems and mixed them with the cheesy stuff, then stuffed the mushroom caps, topping with shredded parmesan reggiano.

Had way more stuffing left, so sent husband to store for some hot peppers. He brought home a lovely selection, a few of each kind they had. We sliced, cleaned and stuffed them too.

Baked everything for a half hour until all brown and bubbly and the house smelled wonderful, ate it with a veggieful tossed salad and pillowy Italian bread. I couldn't handle the stuffed haberneros, but the red cherry peppers and jalepenos were delightful.

Pizza Bread is a slice of white bread, covered with Pastorelli pizza sauce, then covered with shredded mozzarella. My husband then usualkly puts sausage on his, I put cheddar on mine, then we put them in the oven until the cheese melts.

Then we eat them, saving the crusts for the dog.

But we didn't have that last night afterall. We had egg rolls. Tonight is pizza bread.

We'll be having turkey breast (It will go into the oven a bit later on), mashed potatoes, gravy, and green beans. Hubby is very happy about this.
I'm also making an apple pie. He's happy about that, too.

I also cooked some pork in my crockpot for lunch today (and leftovers for the next couple of days). I put in the pork on a bed of rice and grains and dumped a bunch of cherry teriyaki sauce on it.

This had an unexpected effect. When the water cooked off, the rice and pork ended up with this bright pink coloring. I'm thinking of calling this dish "breast cancer awareness pork and rice".

Went for dinner at a new vegetarian restaurant in my neighbourhood - all shiny and modern and trying to stay far away from old hippie stereotypes. I shared an appetizer of avocado frites (deep-fried avocado chunks, so bad yet so good) with smoked paprika ketchup, and had mixed mushrooms in a coconut broth with Walla Walla onion bread for my main. Everything was delicious.

Tonight I'm making shrimp and crabmeat gumbo - with crawfish if Mr Rebo remembers to get some.
