We're having cheese and onion pie for dinner. I'm looking forward to it. We got caught with a full cheese drawer when the lockdown happened, so we've been looking for ways to eat it up before it goes bad. I am not complaining, I love cheese.

MMMMM - a UK speciality. It's kind of . . . cheese and onions. In a crust. With potatoes and mustard, for you crazy cooks.
It's like cheese plus flaky bread plus potatoes and I want some.

I've got a heated cup that plugs into a cigarette lighter. But I only use it when I'm burning gas anyway. I've also built a small fire pit . But soon it'll be too dry to use it. I made sure to buy ready to eat food that doesn't need heating. If I've got time after playing with the IRS website today I'll start an AMA thread.

They have a complicated recipe for the crust that I ignore in favor of a pillsbury roll-up from the store. I've gotten lazier with age, or maybe my standards are slipping.
As written the recipe is pretty dull, so I recommend adding a tablespoon of prepared mustard, a teaspoon of paprika and a full teaspoon of ground back pepper tot he cheese and onion filling. A few cloves of garlic sliced thin and tossed in with the onions is good too. I've added ham (cut into in small cubes) once or twice and that's good, as is crumbed bacon.

Inspired by Kat and her people, I picked up some brats (and beer) today at the local Sprouts market. So it's brats on the grill, beer in my glass and french fries on the side tonight.

Tonight the wife is going to try to replicate a mushroom appetizer (Fungi Saltati) from our favorite Italian place. Lots of butter, garlic, herbs and a dash of lemon on the finish. Sop up all the sauce with a fresh loaf of French bread. Couple of drinks and call it dinner.

We had fish and chips from the restaurant next door. It was great. They only do fish on fridays, it was supposed to be through Lent but they extended it a couple of weeks.

They are really a breakfast place and have basically shut down but also seem cavalier about staying afloat. I think it's a hobby for the owners. But we still want to support the joint.

And the fish & chips were great so.

We ordered Italian, Penne A La Vodka, Chicken Caesar Salad, Chicken Marsala, Fettuccine Alfredo w/ Chicken & Baked Ziti. Comes with some fresh baked Italian Bread and I got some Tiramisu for desert.

In other words, yum and good leftovers for the weekend.

We are trying hard to keep a local brewery afloat. They have a regular menu, along with a quarantine family meal that is different each weekend. We've had lasagna, stuffed shells, roast chicken, and this week stuffed peppers. The meal is meant for a family of four and includes sides and a huge salad. We get three dinners from each meal. The meals are $45, plus we get a six pack and a growler.

Last night I made a pot of 15 bean soup with smoked sausage. It was delicious!

Tonight we're going to get some take-out from down the road. Crab legs and/or crawfish.

I called the restaurant at 5:30. I had five callers in front of me. I got through at 6:48. Placed my order, and it's gonna be 45 minutes to an hour.

I'm glad they're doing so well! I'm hungry, though. I should have called at 5:00. Lesson learned!

Charbroiled oyster, crawfish AND crab legs. Mmm.

We supported another favorite restaurant tonight and I had a goddamned good cheeseburger. Now we'll regress to another 2 weeks of total isolation (after a grocery outing).

Raided the freezer tonight for Signature Spring Rolls and Tai Pei Egg Rolls. Soy sauce, oyster sauce, sri racha and some hot mustard. Call it good.

I know you're all anxiously awaiting the results of last night's experiment* so I have to admit that Kat food is actually pretty good. Stuffed shells with ricotta, smothered in Italian diced tomatoes and Ragu spaghetti sauce, some meatballs, lotsa oregano and basil, in the oven for 30 minutes at 375oF, then piled high with mozzarella cheese, back in for 15 minutes until the cheese is golden brown and the sauce is bubbly, let that bad boy sit for 15 minutes as it's freaking hot while I prepared a simple cucumber salad, fresh parm on top of the servings, crushed red pepper for youngest son and me, damn, that was tasty and easy...

My wife made fried rice with a knock-off Benihana's recipe, complete with shrimp sauce.

IT WAS SO EFFING GOOD. I mean, she didn't do all the showy knife and grill stuff (lazy wench) but OMG TEH EATING PART.

We had takeout from one of our favorite restaurants, the menu was called "Munchies Monday." Total coincidence that today is 4/20 I'm sure.

We don't celebrate 4/20 and every Monday is Munchies Monday but damned good, nachos and tacos and a s'more brownie we haven't dug into yet.

Glad for the obligation to support our favorite local restaurants.

You sound just like my husband. He's about to make a mass batch of caramelized onions, so I'll suggest saving a portion for the next version of cheese and onion pie.

My son came over yesterday to take me to the grocery store. He surprised me with a dozen pork tamales from Tienda El Ranchito in Fairmont City Illinois. Also included in the bundle was REAL mexican crema and green chilli sauce.

OMG...Sofa King good.

You posted that video before, and a couple of weeks ago I made the sauce from it, although I just used chunks of sausage instead of the meatballs. It was most excellent.

Tonight is a reasonably (non-)healthy meal of baked potatoes with a veggie topping. Because face it, after I get through topping it with butter and cheese sauce, the California Mix vegetables aren't going to give the potato that much of a boost.
