BEANS!!
![]() I get the canned beans because I'm lazy, but I put them in a strainer and rinse off the gooey salty goo. Several recipes I've made and loved: Curried red kidney beas (I usually add a few other types of beans, too, just for some color and variety. Black bean hummus (amazing) Black bean burgers (these are delicious and grill well) And, finally, my own recipe for chili chock full of delicious beans! (warning: I don't measure, so it's all estimated) Ingredients: Oil, enough to sauté vegetables (canola) Onion (red) Mexican seasoning blend Oregano Garlic Bell pepper (as many colors as you like!) V8 (about half a bottle) 2 cans tomato sauce 2 cans tomato paste Can of diced tomatoes & green chile Corn (frozen or rinsed canned) 3 cans beans, any variety of pinto, black, red kidney, dark red Whole chipotle, chopped ~4 tablespoons cocoa powder ~1/4 cup red chili powder (or however much you like) 2 tsp. balsamic vinegar Can add: ground beef/turkey, fake meat crumbles, tempeh, whatever you want! Directions are pretty easy! Sauté onions and spices in oil. Add garlic and chopped bell peppers and sauté for a bit. Then, just combine everything else in order and cook for a while! |
