Holiday season recipe thread

There was one of these for Raffsgiving why not for Giraffmasukkah?

What are your favorite holiday recipes?

I have a recipe for eggnog that I love. And I recently made up a batch of eggnog pancakes that kicked butt.

Eggnog:

Disclaimer, contains raw egg. If salmonella is a concern to you, I am told you can buy pasteurized eggs in a shell but I haven't actually seen that.

Also, if you like commercial eggnog...this doesn't take like commercial eggnog. It's similar but different. It has a mellower creamier flavor and a thinner texture.

Ok you need:

8 eggs separated
1/3 cup sugar
2 Tbs of the best quality vanilla extract or paste you can find (or equivalent fresh)
2 quarts Half & Half
1 pint whipping cream
nutmeg to taste. Fresh is best.


Beat 8 egg yolks until blended and add 1/3 cup of sugar. Stir in the 2 tablespoons vanilla. Then slowly mix in 2 quarts half and half. Set aside.

Whip 8 egg whites to soft peaks and gently fold into the first mixture. Move to serving container. (This step isn't necessary, but it gives you a nice foam that I personally like.)

Whip 1 pint whipping cream to soft peaks and again fold into the mixture that is in the container.

Add nutmeg to taste and let sit in a refrigerator for 2 DAYS. The waiting period is non negotiable. It's drinkable before then, but you really need 48 hours for the flavors to settle.



For the Pancakes:

Take your standard pancake recipe (I use one from The Joy of Cooking) and make the following changes.

Replace 2/3 of the liquid with eggnog.
add 1 egg
add 1 tsp of vanilla (2 if you don't normally put vanilla in your pancakes, I do)
add 1/2 tsp nutmeg

Thin the mixture with as much extra milk as is necessary to get to a proper pancake batter consistency. Cook like normal.

EDIT: Dammit, I misspelled recipe in the thread title. Maybe a passing mod could fix that for me?
