Thanks for this tip!! I ended up doing this for our family Christmas party - they were a big hit. I cut the sheets into diamond shapes and did the blue cheese and walnuts. I also ended up doing palmiers with the leftover puff pastry sheets (hey, they were on sale at the grocery store so I bought extra in case I messed up) with some apricot jam I had lying around, and they were pretty good, too.
