Plenty of people have that "no beans in chili!" purist attitude, it's like the Oxford Comma of folksy foods. I used to be an asshole about stuff like that and now I know better. Chili is made however you make it. A martini can have vodka and chocolate syrup for all I care. If you like it that way, bottoms up. And put ketchup on your steak if you like it that way, I don't have to do it.
It's very liberating to stop giving a shit how other people do things that don't affect you. |

Cincinnati chili is weird. The cinnamon makes it taste like some sort of bastardized curry.
I only tried it because my travel companions raved about it and made a point of stopping where we could procure some. Now I can say I tried it so no one can make me do so again. |

But words change. A martini was gin, vermouth, and bitters. The purist attitude that is gin, vermouth, and an olive is actually a change. Now a martini is anything in a conical glass.
I imagine somewhere there's a vegan "cheesesteak" that has neither cheese nor steak. Somehow the world chugs along in its orbit. And you're not the center of the universe, my son is. If you don't believe me, just ask him. |

I am noticing a disturbing trend in restaurants here in the twin cities of making a house ketchup and they should stop it.
(I don't care if you want to make a martini with vodka and chocolate sauce but if I come to your bar and order a martini, you darn well better bring me a martini made with gin, so help me.) |

I like housemade ketchup because it tends not to be as sweet. Bottled ketchup is basically corn syrup and red dye. But right now I can't think of where I've gotten the house ketchup. Maybe Victory 44 had it? The Sample Room? I don't get out much. |

I've had many a bartender assume I mean vodka unless I say gin. But that doesn't happen much anymore. I think vodka martinis were "in" for a while, and now they aren't. In fact, I've seen a decline in any goddamned concoction being called a "Martini," and I reckon that fad has faded. Maybe aided by the restaurant/bar realization that the glasses break a lot.
