There is another option here, and it's the correct one: either.
Yes, both are excellent and have unique qualities that play off the basic yumminess of latkes. However, they should not be mixed. Actually I'm a purist about maintaining condiment purity per latke. Sour cream and applesauce should never meet on an individual latke. Nope, not even on a bite-by-bite basis. Coincidentally, this bauhaus approach provides a wonderful excuse to eat more of them. |

Latkes are some sort of holy Jewish hash browns, right? Why would anyone put applesauce on that? I went with neither. I probably should have gone with I don't eat this food but I'm sure I've had latkes at some point in my life and I'm sure I'll have them again at some point, because I do not turn down opportunities to eat fried food.

There's a bit more to it than that--potato pancakes, pretty much. Which is why I also included that option for us goyim. |

I'm not proud of this, mind, but actually I've quite enjoyed a schmear of sour cream on a latke with a few artistic dribbles of Tabasco. If one absolutely must gunk something with the sour cream, that is. It's...a fusion approach, that's the ticket. |

I chose sour cream, but I have also found they go great with cheese curds and beef in gravy. You applesauce people will come to find that you are abhorrent in the eyes of your god. It eliminates the whole point of keeping Kosher.

(and "yellow" onions, not brown(?)) Also, I agree that a mix of yukon golds/russets is better than either on it's own. Finally, if you can get it cheaply, grapeseed oil or a mix of grapeseed/generic cooking oil is fantastic for these. ![]() |

Not familiar with Arby's potato cakes, so I can't comment on those. But I'll say that my experience agrees with yours as to potato pancakes vs. latkes. I also feel like the potatoes are grated finer for latkes, which may contribute to the distinction. Besides that, I get the feeling that latkes use more eggs, and substituting matzo meal for flour may also have something to do with it.

Matzo meal instead of flour, I think, makes a huge difference in the final texture of the latke. I don't know about the amount of eggs used.
