I made this really easy & good thing yesterday which we'll have again tonight.
1 cup dry garbanzo beans, cooked and drained, or two cans rinsed and drained 1 sm onion diced 2 cloves garlic minced 1 pkg Goya Sazon (Culantro y Anchiotte) 4 oz tomato paste 2 cups chicken or veggie stock 2 diced andouille sausage links, cooked 2/3 cup dry white rice, cooked and fluffed 1 tbsp olive oil Prep the beans in InstantPot or on stove Put the oil in a hot sauce pan, add the onion and garlic, toss it around until its soft, add in the spice pack Add the sausage, beans, stock. Bring to boil and then down to a simmer. Stir in the tomato paste, then cover the pot and let it simmer while you make the rice. |

Well, there isn't a whole lot you can do consistently to make your day happier during this unpleasantness than cooking. OK, maybe exercising, but whatever. I do that a few times a week, I eat a few times a day. The goal is to limit grocery store exposure to once a week or less.
So I've been putting plenty of food on. Nothing crazy, but for the wife's birthday we did do lamb chops and a nice heritage pork chop with asparagus from the socially distant farmers market we went to last week. (And how fucking weird is it to type that sentence.) Done a fair bit of grilling; keeping the charcoal stocks up when I do the weekly grocery run. Steaks, chicken. Stuff you can get a few meals out of. Been using up things from the freezer like refried beans and such. Made a killer garlic yogurt sauce the other night for the grilled chicken. Quesadillas are good. Perishable things like deli meat and vegetables need to be kept fresh and used daily. Or plan on using those soft tomatoes for sauce tomorrow night. Haven't had too much pasta/ramen, but that time is coming. Really more of a variety thing, not dietary apocalypse. Tonight is Asian pork meatloaf, fresh broccoli and miso mashed potatoes. We're socially isolated but eating well. might make freezer and leftover veg beef stew in a few days. Just to make room in the freezer to be honest. A huge Dutch oven full of venison chilli that cooked all day in a slow oven. Served over rice with sour cream, diced green onions, chopped avocado, and cornbread.

What's the deal with leftovers? I, like many people, love having leftovers. Easy-Peasy heat and eat. Some foods are better later, like stew. And yet there are people who hate the idea, my son for instance. |

We thawed frozen homemade turkey soup we made a couple of weeks ago from a turkey dinner...cooked turkeys in our household go through multiple cycles, the meal, then the sandwiches, then the salads, and finally, the soup, it was delicious, served over a bed of egg noodles, a little hot sauce, it was delicious...

When Diners Dives Driveins came to my friend Moondog's Starlite Lounge in Blawnox, PA a few years ago, the pierogis were a big hit. Moondog makes them freaking huge, a plate of three is a challenge to finish. "Pierogis the size of your head."
Last night we got take out. We each had one spinach/feta, potato/cheese, and potato/jalapeño (the potato/jalapeño was that Guy dude's favorite). Moondog caters to Polacks and Hunkies. @Guinastasia, you should place an order, they're selling frozen pierogis by the dozen for Easter (which falls on a Sunday this year. ![]() |

Tonight I'm gonna have pasta w/ my version of Ragout.
Pork ribs, beef cubes and Italian sausage, all braised in a cast iron dutch oven. When meat is tender (and ribs falling off the bone I add sweated mirepoix, diced tomatoes and in this case lima beans...spiced with garlic, marjoram and basil. simmering now, could be a very early dinner. Wish I had a Chianti or Brunello to go with but a bold IPA will do in a pinch. |

After a reasonbly healthful dinner I caved, big time. In precisely 18 minutes I will have chocolate brownies with sour cream & brown sugar swirl. Then set the pan on a towel over some ice packs because there's no way I'm waiting another half hour. That old corelleware is amazing stuff. |

Cut up some chicken and saute it in olive oil with cayenne pepper and turmeric. Spread minced garlic on a big warmed up tortilla, add some chiffonade romaine and leaf lettuce, french cut onions, a dose of the chicken, some horseradish sauce and sri racha, and roll it up.

I have discovered the great secret for green beans--deep fry 'em! Seriously, get an inch of oil or so good and hot in a wok or heavy saucepan, take your green beans all washed and THOROUGHLY dried and put them a handful at a time into the oil. Leave them in for a minute or two until the skins are kinda blistery then fish them out. When they've all gone through the oil, pour the fry oil out and float a bit of sesame oil in the wok and saute some garlic until it's nicely aromatic, then toss the blistery green beans back in for a minute or so. Toss in whatever else you like for seasoning--I used some deep roasted sesame dressing and it was to die for, but a bit of soy sauce or hot sauce or whatever else sounds good would be just fine. I have never had better green beans in my life! I used yard long beans, which tend to be a little tough, and they were almost creamy in texture and the flavor was amazing. Try it, you will not be sorry!
