What's for Dinner?

I'm making curried chicken, potato salad and cabbage and I think I'll bake some sweet rolls too.

My potato salad has no vinegar and no pickle. I use mayo instead of Miracle Whip and I skipped the eggs today. I use lots of finely chopped celery and scallions instead of onions.

I'm fixing the cabbage the way my dad liked it, so it's in the pot with onions, garlic and a whole smoked turkey wing for flavor. I need to add a couple of potatoes soon. I usually like it crispy, but I do it dad's way once in a while.

I added green pepper and chopped tomatoes to the curried chicken just because, and it looks good.

Easter dinner will be on the table around two-ish. This year's feast is being prepared by the Fella, his middle son and me. The menu is pretty traditional for a holiday meal around here:

Deviled eggs (middle son)
Mustard brown sugar glazed ham (the Fella)
Baked macaroni and cheese (moi)
Glazed carrots (MS)
Steamed asparagus w/ hollendaise (moi)
Creamed new peas with new potatoes and pearl onions (MS and moi)
Crudite platter (the Fella)
Homemade cloverleaf rolls (moi, baked yesterday)
Carrot cake with cream cheese icing (MS, but I decorated)

Call me in a couple of days when I come out of my food induced coma.

Asparagus--I need to try the EVOO etc; Easter Egg Potatoes, and Polish sausage (instead of ham).

Easter egg potatoes are pretty much just twice baked with a twist: dice up some hard-boiled eggs, grate some Gouda cheese, dab or two of Dijon mustard; mix with potato fluff (cannot think what the inside of a potato is called--no brain today)along with some sour cream, salt/pepper etc to taste. Fill the potato shells and broil for about 2 minutes until they're browned.

I love this because it uses up the hard boiled eggs nicely. Plus, it's got potatoes, sour cream, Gouda cheese and Dijon mustard--what's not to like?

Since there will be only 9 of us here, I put my foot down and scaled back.

Ham
mashed w/gravy
baked beans
steamed asparagus
green bean casserole
deviled eggs
veg tray
cranberry relish
kugel
strawberry shortcake

Gravy is from pot roast a few weeks ago, I made a boatload and froze it just to have today. Rolls are from the store because I don't care much about them and no one else volunteered to make any homemade.

I'm making a sort of eggplant parmesan/lasagna type deal....it's breaded eggplant, oven-"fried", then layered with ricotta and mozzerella and baked. When done, it'll be plated on some fresh tomato sauce.

I know, right? I only went because I was with friends who wanted to go. I don't even like their coffee, I have basically no reason to go to Tim's except for maybe the free donut I won on Roll Up the Rim.

I am actually going to cook today. I know - my husband is shocked too. Chicken thighs on top of a couple slices of ham, covered with a piece of bacon, then baked. The sauce is added at the end - sour cream and cream of mushroom soup, then baked another 15 minutes. Served over rice. With a side of pan roasted asparagus with garlic, parmesan and lemon juice.

He's not real sure WHY I'm cooking - but he's happy anyway.

He doesn't know yet that he's going to be cleaning the bathrooms tomorrow. I might be working at home, but I'm WORKING. He isn't. He gets the bathrooms.

Tonight was roast chicken, rubbed with olive oil and "italian herbs", rice and veggies.

Tomorrow night will be.... leftover roast chicken, probably biscuits and green beans. Or maybe cereal--I'm home alone tomorrow night. But I do love leftovers.

I had egg foo young delivered to my office at 5pm so that I didn't have to cook. Now I have dinner for tomorrow night too. I had the Chinese food with some of the cabbage I cooked on Sunday.

A few weeks ago I went to The Waring House for a weekend away and a cooking lesson. We cooked (and ate) a lovely 4 course meal with a selection of local wines. Although I could have made an entire meal out of every single dish we made the most repeated recipe has been the Parisienne Gnocchi. I have always loved gnocchi but these are like little cream puffs of dough served with sauted squash and mushrooms. This is not helping my attempts to eat less carbs.

I take shortcuts with those potatoes. I microwave them for about 4 minutes instead of boiling them. I use parchment paper, and just drizzle olive oil over the squashed taters. Then I sprinkle bacon bits, salt and pepper over them. Bake for 15-20 minutes, then sprinkle cheese and bake another 5 minutes. Remove from oven and garnish with chopped scallions.

Went to Tin Lizzy's with friends for Mexicanish bar food. Had some delicious black bean soup, nachos with spicy chicken and a skillet (rice w/onion and peppers) with grilled shrimp.

We had a late night at school, so earlier in the evening we went to the grocery store and got a whole roast chicken, a caesar salad and some rolls. It was a group effort, one guy provided paper plates and plastic cutlery, I provided beverages and butter. It was seriously delicious, and the whole meal had a kind of picnic vibe. I like my classmates.

Tonight's dinner will be a pot of pinto beans using up the ham bone from Easter. Side dishes will be turnip greens cooked with some smoked neckbones for seasoning and a skillet of cornbread. I'm teaching the Fella's middle son how to make fried pies (peach) for dessert.

We try to do a meal about once a month that incorporates one of the cultures from either of our families. We do Appalachian and Irish (both sides), Polish and German (my side), Cajun and Norwegian (the Fella's side) and some Spanish and Mexican (the boy's other heritage). It's fun since both of us like to cook and the middle son has taken an interest.

I got home late last night and since I skipped dinner I needed a bite before retiring. Something light... a couple leafs of leaf lettuce, shredded cheddar with light mayo, and a small handful of fried noodles wrapped in a pesto tortilla. Washed down with a ginger ale.

Tonight I'm making baby back ribs. In the oven, though, because we're having on and off thunderstorms. And canned Ranch Style Beans (yum!), and cole slaw, and fresh sweet corn on the cob (boiled - see aforementioned thunderstorm or they'd be on the grill) and -

ta da!

Peach Cobbler! With vanilla ice cream. (Ok, it's frozen yogurt, but I can't eat dairy.)

Fried Pies

Crust:

Cut 1 c. lard into 3 c. flour and 1 tsp. salt until crumbly. In another bowl, mix 1 egg, slightly beaten, 5 Tbsp. water and 1 Tbsp. vinegar. Add to the flour mixture a little at a time. Roll and cut into ~6" circles. Makes ~7-9 circles.

Pies:

On each circle, spoon ~2 Tbsp. fruit pie filling (this can be canned or homemade) on half. Fold the circle and crimp the edges. Fry in a heavy cast iron skillet in ~1/2" lard until golden on each side. Drain on paper towels.

This is pretty much what my grandmother made, but she never used measurements. They remind me of her.

I just put together a batch of homemade Beef Stroganoff.
Of course, just for shits and giggles, we always call it 'Beef Strokin'Off'.
