There is another option here, and it's the correct one: either.

Yes, both are excellent and have unique qualities that play off the basic yumminess of latkes. However, they should not be mixed. Actually I'm a purist about maintaining condiment purity per latke. Sour cream and applesauce should never meet on an individual latke. Nope, not even on a bite-by-bite basis.

Coincidentally, this bauhaus approach provides a wonderful excuse to eat more of them.

Latkes are some sort of holy Jewish hash browns, right? Why would anyone put applesauce on that? I went with neither. I probably should have gone with I don't eat this food but I'm sure I've had latkes at some point in my life and I'm sure I'll have them again at some point, because I do not turn down opportunities to eat fried food.

Ahem.

I'm not proud of this, mind, but actually I've quite enjoyed a schmear of sour cream on a latke with a few artistic dribbles of Tabasco. If one absolutely must gunk something with the sour cream, that is.

It's...a fusion approach, that's the ticket.

I like my latkes naked, or maybe with a little butter. I would probably use sour cream if I ever had any in the house.

You are all dead to me. And to think I used to like some of you. Well, Solfy is ok I guess, but butter on a latke is just too much fat on top of fat even for me.

Clearly applesauce is the right choice because sour cream is vile. But if you like that sort of thing, it's acceptable to use sour cream by itself. People who mix...:eew:

My niece always asks "where's the applesauce" when I make pork chops. I don't know what in the dickens she's talking about. It's like she's been raised by wolves or something.

I've never had the pleasure of eating a latke. But I suspect that I would choose sour cream and not applesauce. Ick.

Oh, for those of you who have not had latkes, do you have Trader Joes near by? I just got a box of their frozen latkes and they are very good. Not as good as home made, but very good.

I chose sour cream, but I have also found they go great with cheese curds and beef in gravy. You applesauce people will come to find that you are abhorrent in the eyes of your god. It eliminates the whole point of keeping Kosher.

One of my friends just sent me her latke recipe yesterday since we were talking about them last night. I suppose it's only fair to share!

5.)To cook the latkes, drop large spoonfuls into a pan of very hot oil. Using the spoon, quickly and gently press the potato mixture to make it flat, Turn once, cooking until both sides are golden brown.

Actually, the real reason I wanted to post was to give approval to your friend's recipe. It looks a lot like what my mom would make, only she would chop in one medium yellow onion for every 4 potatoes and only used Russet.

I don't know why, but I can't get the hang of making them myself. Mine never turn out...edible. But I recommend that others who have not had them give it a shot. They are uber-tasty.

Correct, but potato pancakes tend to be flatter and...chewier....while (again, in my experience) latkes tend to be fluffier (the egg, maybe?) more like tater-tots or Arby's potato cakes than say...Denny's hash browns.

This is pretty close to mine...subtract an egg, add a bunch of chives/chopped (if you can get 'em) or green onions if you can't and substitute one apple for one of the onions. (and "yellow" onions, not brown(?))

Also, I agree that a mix of yukon golds/russets is better than either on it's own.

Finally, if you can get it cheaply, grapeseed oil or a mix of grapeseed/generic cooking oil is fantastic for these.

Not familiar with Arby's potato cakes, so I can't comment on those. But I'll say that my experience agrees with yours as to potato pancakes vs. latkes. I also feel like the potatoes are grated finer for latkes, which may contribute to the distinction. Besides that, I get the feeling that latkes use more eggs, and substituting matzo meal for flour may also have something to do with it.

Matzo meal instead of flour, I think, makes a huge difference in the final texture of the latke. I don't know about the amount of eggs used.

Matzo meal makes a huge difference. Flour (IMO) is waaaaaay too starchy and dense.

Hmmm...something else I'll need to check out the next time I go to Trader Joes.

I voted for both because either was not on the poll. I've never had both on the same latke, primarily because when I have latkes I seldom have both applesauce and sour cream available.
